FLAPJACKS RECIPE:


1 1/2 cups cake flour
3 tbsp sugar
1 tbsp baking powder
1/4 tsp salt
1 1/4 cups milk
1/4 cup melted butter
2 large eggs-beaten
1 tsp vanilla extract
1 tsp cinnamon(optional)


Mix all the ingredients in a large bowl to form a smooth batter.
Heat a knob of butter with 1tsp of vegetable oil on medium.
Spoon in amounts of 1/5 cup for a nice size crumpet.
Brown on either side & ENJOY!!!

  1. CHICKEN STROGANOFF-SLOWCOOKED:

    4-6 boneless,skinless chicken breasts (cubed/sliced)
    1 heaped tbsp butter
    1 packet dry italian dressing mix
    250g cream cheese
    1 tin chicken soup

    Place the chicken,butter & italian dressing mix into slow cooker,stir well & cook for appx 5hrs
    Then add the cream cheese and the soup-stir together and cook for another 1/2 hour
    Serve with rice/pasta & side salad.
